For mains, savour the comforting richness of the pork cassoulet, Kurobuta pork cheek, Iberico chorizo, white beans, and pork floss brought together in a deeply satisfying dish, or opt for the elegant butter-poached hake, served with prawn mousse, tomato–olive tapenade, and a silky red pepper emulsion.
