Begin with Vitello tonnato, featuring tender roasted veal paired with a light tonnata espuma, caper textures, semi-dried tomatoes, and crisp rucola. Follow with Risotto baccalà e prosecco, a creamy Carnaroli risotto enriched with cured cod mousse, charred onion purée, and a touch of caviar.
For the main course, select either Sous vide ocean trout with scallop–Tuscan kale pesto mousse, spinach, and porcini, or a richly satisfying Wagyu striploin complemented by mulled-wine sauce and pancetta-sautéed potatoes.
Dessert brings a choice of two exquisite creations: a refined Babà with blackberry-fig confit and chestnut rum gelato, or the playful X’mas Cocoa Tree, featuring chocolate creameux, cocoa sable, and Morello cherry sorbet.
