Highlights include line-caught local threadfin served with Sarawak-style Assam curry and fish noodles, crispy rock lobster with creamy Sze Chuan pepper and arugula caviar, seafood simmered in a rich milk broth inspired by traditional kelong cooking, and tiger prawns glazed in sizzling garlic chilli soy butter with calamansi.
More than a dining experience, Kelong Farm to Table shines a spotlight on Singapore’s kelongs — traditional offshore fish farms that have long supported the nation’s seafood supply and coastal identity but are increasingly disappearing. By sourcing directly from local fish farmers, producers, and kelongs, Fairmont Singapore and Swissôtel The Stamford help support a more sustainable local seafood ecosystem.
