The buffet features a variety of lobster preparations, from chilled starters to hearty mains. Begin with lobster cocktail, lobster on ice, lobster sushi roll, and lobster bisque, complemented by fresh seafood on ice, including Maine lobster, oysters, prawns, mud crab, and scallops.
At the live station, diners can enjoy lobster potato rösti, saffron lobster risotto, and lobster thermidor, each crafted with fresh herbs, parmesan, and carefully selected accompaniments.
Local and international flavours abound, with dishes such as kam heong lobster, black pepper lobster, white pepper lobster, Singapore chilli lobster, mala lobster, Sarawak white pepper lobster bee hoon, lobster biryani, and lobster butter masala, alongside comforting broths at the kopitiam noodle station, including lobster laksa and prawn shellfish broth.
The buffet also offers a farm-to-table salad bar, smoked fish and charcuterie, and a carving station with tender slow-roasted meats and locally-sourced barramundi, freshly sliced to order and served with a selection of condiments. Comforting breads, a curated cheese selection, and an array of desserts, from decadent chocolate creations to tropical fruits and refreshing ice cream and sorbets, complete the indulgent experience.
