In this exclusive event, Executive Chef Kirk Westaway joins forces with Chef Truong Quang Dung of Michelin-selected Chapter Dining and Chef Huan from Tales by Chapter – Vietnam’s first zero-waste, plant-based restaurant. Together, they present a thoughtfully curated menu that celebrates sustainability, seasonality, and ingredient-led cuisine.

Diners will enjoy refined creations such as butter-poached seabass with Da Lat caviar, pigeon with black pudding and plum, and smoked watermelon ponzu with nasturtium flowers.
