Inspired by fond memories of springtime in his native Devon, in the southwest of Britain, Executive Chef Kirk Westaway unveils the latest evolution of his seasonally driven menu at JAAN, Swissôtel The Stamford.
Drawing from Europe’s cooler-season produce, his refined Modern British menu highlights the natural richness of ingredients such as salt-baked white beetroot, Jerusalem artichoke, wild turbot, milk-fed Pyrenees lamb and caramelised chestnut, crafted with innovative technique and elegant artistry.
