The Cliff’s Chef Paolo Benedet presents a 4-course set menu, L’Amore Per Il Mare (Italian for “Love for the Sea”) at Sofitel Singapore Sentosa Resort & Spa.
Begin with chilled seafood salad with extra virgin and lemon dressing, crispy celery and sundried tomatoes. Followed by homemade tagliolini pasta with prawns, zucchini and mullet bottarga and pan-seared pistachio-crusted tuna with grilled zucchini, orange and black olives salad. End the meal on a sweet note with the balsamic vinegar sautéed strawberry and lavender flower ice cream.
